Banana Muffins

The best banana muffins. These muffins are easy, healthy and delicious. Because Thanksgiving is around the corner and I know that my family needs something healthy and yummy I usually make these muffins for Thanksgiving.

Ingredients:

  • ­240 g (430 ml) Almond flour or Bob’s Red Mill Gluten free All Purpose baking flour.

  • 15 ml baking powder

  • Pinch of salt

  • 1⁄4 teaspoon stevia extract

  • 1 egg

  • 225 ml coconut milk

  • 2 teaspoons of coconut oil

  • 2 ripe bananas ( mashed)

Method:

Preheat oven to 375 F / 190 C. Add flour, baking powder and salt in a mixing bowl. Add the stevia extract.

Whisk the egg, milk and coconut oil in a different bowl.

Add the mashed bananas to the egg mixture and mix well

Add everything to the flour and mix well with wooden spoon

Put mixture in muffin pans and bake for 15 – 20 minutes till done
